If you are not a blue cheese fan, you can swap it out for another dressing like honey dijon and swiss cheese chunks. Serves four.


Candied Pecans
1 tablespoon butter
1/2 cup pecan halves
1 tablespoon brown sugar
1 (8 oz.) bag spinach
1 apple cut into thin slices
6 tbsp candied pecans
1/2 cup blue cheese crumbled
1/4 cup mayonnaise
2 tbsp half n half cream
2 tbsp sour cream
dash of Worcestershire sauce
pepper to taste

1. Candied Pecans: Melt butter in small frying pan over low heat, add pecans and brown sugar.
Cook 2 to 3 minutes, stirring constantly until mixture is caramelized and pevans are coated. Place on wax paper to cool or a glass plate.

2. In a bowl add sour cream, mayo, half n half, and Worcestershire sauce, whisk until well blended. Add pepper to taste. Stir in 2 tbsp of the blue cheese crumbles.

3. In a large bowl add spinach and dressing, toss well. Place salad on plates, add apple slices, pecans and sprinkle a bit more blue cheese on top.
