Healthy and tasty, great for a summer lunch.


2 carrots, grated
1 red pepper, finely diced
2 celery stalks, finely diced
1/4 medium red onion, finely diced
1/4 cup cilantro or parsley, chopped
1 can mandarin slices
2 tblsp toasted sesame seeds
Optional: 1/4 cup roasted peanuts, almonds, or cashews.

2 tblsp sesame oil
1 tblsp fresh squeezed lemon juice
1 tblsp honey
2 tblsp soy sauce
1 tsp grated ginger
1 small clove of garlic, grated

1. Add all the dressing ingredients in a bowl and whisk until well blended.

2. Add all the salad ingredients in a bowl and mix. Serve in small bowls and add dressing.
