Healthy, light, tasty and fresh!
1 lb grape or cherry tomatoes
1 english cucumber
1/2 medium red onion, sliced
2 avocados, diced
2 Tbsp extra virgin olive oil or sunflower oil
Juice of 1 medium lemon (about 2 Tbsp)
1/4 cup (1/2 bunch) basil, chopped
1/4 tsp sea salt
1/8 tsp black pepper
1. Chop tomatoes, cucumber, red onion, avocado, and basil, put into a large salad bowl.
2. Whisk olive oil and lemon juice in a small bowl. Pour over salad ingredients and toss.
3. Serve and sprinkle with salt and pepper.
