1 tblsp Butter
1 tblsp Unbleached All-Purpose Flour
1/2 sweet onion diced
jalepeno or chili pepper finely diced, add to taste
3/4 cup mild, medium or hot tomato salsa
1/4 cup Sour Cream
2 cups Extra Sharp Cheddar/ Sharp Cheddar shredded
1. In a medium sized saucepan heat the butter on medium low. Add the onion and finely diced jalepeno, continue to stir until onion is clear and soft. Add the flour and stir for about half a minute.
2. Add the salsa and stir, as it simmers add the sour cream and continue stirring.
3. Add the cheese and continue to stir until well blended. Meanwhile, warm chips at 200 degrees in oven.
4. Serve in a bowl while hot with the chips.
