Whats almost as good as sex… choc mousse. A great prelude for a romantic evening. Top with a few fresh berries if you have some in your fridge.
1. In a saucepan, bring half the cream to a boil.
In a bowl, beat the sugar and egg yolks for 2 minutes, until the mixture whitens. Whisk in the hot cream. Add 9 oz of the chocolate and allow to melt for 1 minute without stirring. With a whisk, stir until the mixture is smooth.
Cover and refrigerate the bowl for about 45 minutes, until chilled.
2. Meanwhile, in another bowl, whisk the remaining cream until soft peaks form. Remove the bowl from the refrigerator and, using a spatula, fold in the whipped cream. Divide into small cups or cocktail/martini/margarita glasses. Cover with plastic wrap and refrigerate.
3. Shave some dark chocolate on top or add some fresh berries.
