A dinner party appetizer for eight.
2 lb new potato halved
1/4 lb asparagus tips
1 bag mixed salad leaves
1 bunch parsley, roughly chopped
1 bunch mint, roughly chopped
1/4 cup radish, thinly sliced
2 lb smoked salmon
4 spring onions, sliced
3 tbsp lemon juice
1/2 cup olive oil
1 tsp wholegrain mustard
2 red chillies
pepper to taste
1. Boil potatoes in salted water for 10 mins until tender, add the asparagus tips for the final 2 mins of cooking. Drain and allow to cool.
2. Whisk together the salad dressing ingredients in a bowl. Add pepper to taste.
3. In a large bowl, toss together the potatoes, asparagus, salad leaves, herbs and radishes. Add two-thirds of the dressing, thoroughly mix through the salad, then spread the salad over a large platter.
4. Break the smoked salmon into large chunks over the top, and top with the sliced spring onions. Pour the remaining dressing over the top.
