With various holidays during the year, cooking roasts, turkeys and even chicken. A recipe for gravy is an essential. You can alter the recipe depending on what your cooking. This recipe will utilize the roux base we posted. You can add some mushrooms to your gravy, just cook them when you do the onion and garlic.


4 tblsp butter
4 tblsp all-purpose flour
1 tsp minced garlic
1 sweet onion minced or finely chopped
1 1/2 cup Pan drippings
1 1/2 cup low-sodium chicken/beef stock (if you would like a creamy chicken gravy you can sub out some heavy cream for some of the stock)
Freshly ground black pepper
Turkey Herbs
1 tsp rosemary
1 tsp minced fresh thyme leaves
1 tsp minced fresh sage leaves
Beef Herbs
1 tsp thyme
1 tsp oregano
1 tsp rosemary

1. Melt 2 tblsp butter in a small saucepan over medium heat. Add garlic and onion and brown slightly. Put in bowl.

2. Pour butter from bowl back in pan and add the rest of the butter and whisk in flour on about med low until the mixture is golden.
Start whisking in the pan drippings. Add the garlic and onion and other herbs. Continue whisking and adding the pan drippings.

3. Add the stock while whisking to the desired thickness. Pepper to taste.
