2 tblsp ground thyme
1 tblsp ground rosemary
1 tblsp ground allspice
1 tblsp ground ginger
1 1/2 tsp onion powder
1 1/2 tsp black pepper
1 1/2 tsp ground cinnamon
3/4 tsp ground nutmeg
3/4 tsp garlic powder
3/4 tsp paprika
2 tsp ground hot peppers, like habenerno or whatever you can handle
3 medium scallions, finely chopped
1/3 cup sugar
3 lbs chicken of chicken pieces
1 lime, juice of
1/4 cup olive oil
1 tblsp soy sauce
1. Add all ingredients in a large bowl except the chicken, lime, olive oil and soy sauce. Mix well.
2. In another bowl, whisk together lime, loive oil and soy sauce. After you have it well blended, dip a piece of chicken in this mix and rub it in. Then transfer it to the other dry mix bowl and cover it with the spices etc, get a good coating on all of the piece. Place the piece on a baking tray or something that you can put in your fridge. Repeat the coating steps for all the chicken.
3. Refridgerate for and hour or two and then bring out to return to room temp. Meanwhile fire up your bbq grill so its nice and hot. Sear all the chicken with the flames high and then turn the grill down to medium low and cook with the lid down for about 20-30 minutes.
4. You want the internal temp of the chicken to reach 165 degrees F. You want it fully cooked but not drying out.
