Serve this with jamaican jerk chicken and plantains for a full jamaican meal.


1 can (19 oz) Kidney beans
1 1/2 cups Coconut milk
2 cloves Garlic, chopped
1 Small onion or 2 stalks scallion, chopped
1 tsp Dried thyme
1 tsp Salt, to taste
1/4 tsp Black Pepper
2 cups Long grain rice

1. In a large pot add 1 cup of juice from kidney beans, the coconut milk and 1 1/2 cups water. Add everything else except rice and bring to a boil. Stir, add rinsed rice and bring to a boil for a couple of minutes.

2. Cover pot and turn down to low for about 20 minutes. Until rice is fully cooked.

3. Stir and serve.
