Awesome for brunch, make a take a slice to work or add a salad and make a dinner out of this recipe.
- 1/2 cup butter
- 1 small onion, chopped
- 1 cup sliced mushrooms
- 1 cup grated gruyere cheese
- 1/2 cup grated old cheddar
- 4 large eggs
- 1 cup light cream
- 1 – 9 inch deep dish frozen pie shell.
1Preheat oven to 375 degrees F (190 degrees C). Precook pie shell for 10 mins. Meanwhile, in a medium sizepan, melt butter over medium heat. Saute mushrooms and onion in butter until lightly browned, about 5-8 minutes.
2Spread the onion and mushrooms around the pie shell after they are slightly browned. Grate 1 cup gruyere and 1/2 cup old cheddar and sprinkle over onions and mushrooms in the pie shell.
Keep some of the cheese to sprinkle on top.
3In a medium bowl, whisk together eggs and cream. Season with pepper. Pour into the pastry shell, allowing egg mixture to thoroughly combine with mushroom cheese mixture.
4Bake in preheated oven for about 45 mins. Sprinkle remaining cheese on top after about 20 mins, while its cooking.Allow to stand for about 10 minutes before serving.
