This salad is like a gay parade with every colour in the rainbow!
Mixed Greens (green & purple)
1/2 Yellow Pepper Sliced
2 Tblsp Mandarin Slices (canned)
1/2 Red Pepper Sliced
1/3 English Cucumber Peeled
2 Tblsp Dried Cranberries
1-2 Tblsp Toasted Almond Slivers
2 Tblsp Crumbled Blue Cheese
Renee’s Pear & Blue Cheese Vinaigrette, to substitute a dressing if you choose one that has some sweet flavour, it will contrast with the blue cheese.
1. Wash mixed greens in a large strainer, set aside to drain.
2. Set a medium frying pan on medium heat, add almond slices and shake pan as they start to brown.
Take out of pan and pour in a bowl so the pan heat doesn’t burn them.
3. Peel and slice cucumber, peppers. Shake salad in strainer to get any remaining water out and place on a plate.
4. Add cucumbers and mix with dressing. Top with mandarins, sweet peppers, almonds, dried cranberries, blue cheese. Drizzle a touch more dressing and serve.
